Sometimes I feel like I’m on a mission to get mussels, clams and other mollusks into more homes. They are so delicious, nutritious and come together in a pinch. They are also so fun to take to different corners of the world, depending on your whims. You can experience the tastes of southeast Asia to Japan, to France, to Morocco and everywhere in between, just by playing with your accompaniments. My son is a huge fan of clams and mussels in particular so we make them often.
What you’ll learn:
How to shop and know freshness
How to store in the fridge
How to clean and purge sand
How to know which to discard and not eat
How to Cook different ways. I’ll do:
Mussels in thai curry
Clams with butter, garlic, parsley and lemon

Fish Cookery

Ever wanted to buy a whole fish( today we’ll do round fish) and know exactly what to do with it? Let’s take care of that in this class. We’ll talk about how to clean, gut and scale fish, (even though your fishmonger can do that for you), then practice filleting. I’ll then show you two different cooking methods.
What you’ll learn:
Cleaning, gutting, and filleting round fish
Seared, skin side down for a crispy skin.
Baked in parchment paper, (en papillote)
We’ll also discuss other options along the way and answer questions as we go.
This class will really demystify how to work with whole fish, even if you just want to cook them whole!

Over the years I’ve gotten so many questions about pans. This little workshop is long overdue and I’m really excited to dive into this topic with you. I’m a sucker for all things kitchen tools and our pans are fundamental to so much of what we do. If you’ve been putting off cleaning your pans, or re-seasoning them, take advantage of this live and let’s bang out the project together!

How to maintain and use cast iron and carbon steel pans and why you have no need for “non-stick”/teflon.
What to cook and what not to cook in cast iron vs stainless or enameled cast iron
How to keep your stainless or copper pans shiny
How to sear fish without it sticking
How to cook eggs in either stainless, or cast iron without them sticking

Live Class | Cassava Tortillas

In this class we’re going to dive into all things Tortillas! These are not the corn or wheat flour tortillas you are likely used to, but cassava or yucca flour. Ever since I started making these, they’ve been at least a monthly staple in our home. They’re easy to make and always a hit. Cassava flour yields a really special texture that gives a nice chew to these tortillas. We use them as a vessel for tacos, quesadillas, like a roti alongside curries or even as a sweet bite with nut butter and honey.
What you’ll learn:
Making the dough
Rolling out between parchment vs pressing with a tortilla press
Cooking
Storing
2 variations on the dough (green w/spinach, red w/beet powder)
Ideas on fillings
By the end of the class you’ll have a stack of tortillas to enjoy for a delicious lunch. It’s always a ton of fun to cook live with you, but if you miss the live class I will share a recording.
