Ever wanted to buy a whole fish( today we’ll do round fish) and know exactly what to do with it? Let’s take care of that in this class. We’ll talk about how to clean, gut and scale fish, (even though your fishmonger can do that for you), then practice filleting. I’ll then show you two different cooking methods.

What you’ll learn:

  • Cleaning, gutting, and filleting round fish

  • Seared, skin side down for a crispy skin.

  • Baked in parchment paper, (en papillote)

We’ll also discuss other options along the way and answer questions as we go.

This class will really demystify how to work with whole fish, even if you just want to cook them whole!
